Lemonade Cupcakes

Success..

2 1/4 Cup Sifted Cake Flour
1 Tbs Baking Powder
1/2 Tsp Salt
1 1/4 Cup Milk
4 Large Egg Whites
1 1/2 Cup Sugar
Zest of One Lemon
1 Stick / 8 Tbs Unsalted Room Temperature Butter
1/2 Tsp Pure Lemon Extract

Preheat oven to 350 degrees and line your cupcake pan.

In medium bowl mix your sifted flour, baking powder and salt. Set Aside.

In another medium bowl mix your egg whites and milk and set aside.

In mixing bowl add sugar and lemon zest. Rub together with your hands until the sugar smells nice and lemon like! Add your butter and mix on medium for a few minutes. Then mix in lemon extract and a third of your flour  mixture. Next add one half of the egg mixture, mix, add in one half of your dry mix, mix, add in the rest of your eggs and then the rest of the dry.

Mix for a couple of minutes longer and then fill your cupcake pan. Bake for 18 to 20 minutes..

The boys have informed me the cupcakes do taste like Cherry Lemonade but they like the cupcakes without the frosting better! And no cherries on the cupcake for Cole.. That's just "gross..."

Cherry Buttercream For Cherry Lemonade Cupcakes

So decided to start baking again.. Baking makes me peaceful and makes me smile on the inside.. John chose Cherry Lemonade cupcakes to start off with.

Cherry Buttercream Frosting

1.5 sticks softened unsalted butter
4 Cups Confectioner's sugar
8 Tbs Marchino cherry juice

Mix it all up for cherry goodness..













A New Way
